Today I’m sharing my easy, delicious and healthy gluten free and sugar free pancakes. These pancakes are not too sweet and are so quick and easy to make!
I’m going to admit something pretty gross here… I used to melt down a massive bar of Dairy Milk chocolate and smother my gluten, dairy and sugar filled pancakes in it. Ha!
If that isn’t a recipe for skin disaster then I don’t know what is! In fact, the pancakes were usually the topping for my massive bowl of melted chocolate and some days, I wouldn’t even get around to making pancakes, I’d just eat the melted chocolate straight from the bowl!
Healthy, gluten free pancakes for acne || serves 8
These beauties are just as tasty reheated – I like to make a batch of these so I can enjoy them for dessert a few nights in a row! Once cooked, I pop them on a cooling rack. (Don’t pile them on top of each other as the oils in the coconut milk/ground almonds can cause them to go soggy!) Once cooled I pop them in an air-tight container with a layer of baking paper in between each pancake. I simply re-heat in the oven or in a pan and enjoy!
If you have trouble finding arrowroot powder, you can just use 1/2 cup of tapioca flour instead! I find using just tapioca flour makes the pancakes a little more ‘elasticky’. The arrowroot powder helps make the pancakes a little lighter, and less dense. Both work really well, but I find the blend of arrowroot and tapioca give it just the right consistency!

Ingredients:
- 1/4 cup tapioca flour/tapioca starch
- 1/4 cup arrowroot powder/arrowroot starch
- 1/2 cup ground almonds
- 1 can (400ml) coconut milk
- 2 egg
- pinch of Himalayan Sea Salt
Method:
- Mix all the ingredients together in a large mixing bowl with a whisk.
- Heat up a pan with a little coconut oil till it’s very very hot.
- Using a ladle, pour some of the mixture into the hot pan cook through on both sides – I find about 1 minute each side is just about perfect!
